Baha Mar will welcome Leola, a new Italian restaurant by chef Scott Conant, this fall at Grand Hyatt Baha Mar.
A new dining experience at Baha Mar
Leola will feature a 106-seat main dining room, a 130-seat terrace, two bars, and a private dining space, all designed by Restoration Hardware to evoke the charm of a 1920s Italian speakeasy.

Chef Scott Conant’s vision for Leola
Scott Conant shared,
“Bringing Leola to life at Baha Mar is something I’ve dreamed about for a long time. I’ve always been inspired by the beauty and spirit of the Bahamas, and it felt like the perfect place to create a restaurant that’s both personal and inviting. With Leola, we’re blending the kind of food and hospitality I love—warm, soulful, and rooted in connection.”
The name Leola is a playful twist on leone, the Italian word for lion, and a tribute to Conant’s grandfather.
Italian classics with a twist
Leola’s menu will spotlight Italian favorites like Pasta al Pomodoro, Ossobucco Roasted Pork Shank, and Roman-Style Artichokes, alongside a curated wine list focused on Italian Barolo vintages and inventive cocktails.
Design and atmosphere
Leola’s interiors will blend velvet furnishings, gilded details, and ambient lighting to create a space that’s both timeless and family-friendly.
Culinary events and more
Leola joins Baha Mar’s acclaimed dining lineup and will host special events during the Bahamas Culinary & Arts Festival, where Chef Conant will appear alongside other renowned chefs.
